Place red wine jus into your sauce pot, adding 75ml of water. On medium heat, bring the sauce up to a boil. Turn down to a simmer for 20 seconds. Check the consistency using a spoon - if it can coat and hold to your spoon, it's ready to go. If it reduces too much, add a touch of water.
