Saba, Aceto Balsamico Balsamic Vinegar By Riccardo Giusti
Ingredients:Must of cooked sun dried grapes, aged vinegar. 250 mL
Balsamic Vinegar of Modena is traditionally made with two components: slowly cooked must from select local grapes, and aged wine vinegar. The 'Saba' Grape Must Vinegar is vinegar made with only the must, known as 'Saba' left to cook in the open air for multiple hours. The resulting product is a sweet and dense vinegar, perfect to match with cheese, fruit or to integrate into cakes and gelato. In 1605 Giuseppe Giusti started to produce Balsamic Vinegar of Modena IGP in the countryside of Modena, in the region of Emilia Romagna. Giusti’s products became very famous and were even used by the Italian royal family. Seventeen generations have passed down Giuseppe's unique and detailed balsamic vinegar recipe that is still in use today. Their secret in the recipe to make the perfect Balsamic Vinegar of Modena depends on three conditions: good choice of the grapes, high quality of the aging barrels, and time.
